We are proud to showcase Joel Gilby's abalone, farmed on the foreshore here in Stanley. Our Pacific oysters are locally grown and supplied by Tarkine Fresh Oysters in Smithton.

At the Stanley Hotel Bistro, we are committed to sustainable and local sourcing of our products. Tasmania’s temperate climate and four distinct seasons influences our menu and specials, and all ingredients are thoughtfully sourced enabling you to experience the best of Tasmania. We stand by our commitment to only use the freshest of seafood, the Smith, Heathorn, Hardy, Hursey and Bishop families supply us daily with what comes in from the local fishing boats, including scallops, lobster in season and octopus.
From the fertile soils of Forest, Sue from KimchiMe supply our mixed cabbage kimchi.
Our succulent pork is supplied by Scottsdale Pork which is paddock-bred in the Cuckoo Valley of Tasmania.
Our beef comes from Greenhams in Smithton, which is a family owned business. Only the best grass fed cattle are selected for the Greenham’s Cape Grim and Tasmanian Natural Beef labels. An exceptional product that reflects the unique environment in which the cattle are grown.
Smithton, the very heart of the dairy region of the state, is La Cantara Cheese which feature on our cheese platter – you can visit their robotic dairy to see the cows being milked and watch the cheese being made.
Enjoy a great selection of Tasmanian wine, beers and water from our wine list.
To our delight, our local suppliers often dine with us, and enjoy the way we serve their produce, which, to us, is the best recommendation.
Our chicken comes from the trail blazing Nichols farm at Sassafras, known for its true commitment to ecologically sustainable farming practices and are aiming to be carbon neutral soon.
We use Shakespeare Hills Eggs which are truly free range and pasture raised, while in the area buy a carton at their road side stall at Mawbanna.
While at Mawbanna visit Dip Falls and call into the honey tasting centre at Blue Hills Honey, we use their award winning honey on our quail dish.
